Recommended bottling period

The recommended period is from January to April on non-humid and windless days. According to the ancient tradition, it is appropriate to bottle new wine with the FULL MOON (also called "OLD" MOON).
This year the most suitable periods are:

  • From 16th February to 2nd March 2024
  • From 17th March to 1st April 2024
  • From 15th April to 30th April 2024

(To avoid unwelcome refermentations in demijohn, bottle the wine immediately after purchase).
 

Cleaning and hygiene

To prevent wine alterations, it is very important to ensure that the container used for the purchase and transport of wine is clean and dry. In the same way, it is good practice to clean the bottles with specific detergents, especially the recovery ones, rinsing them thoroughly and letting them dry upside down before filling them. 
Make sure that all the tools to be used for bottling are perfectly clean.
 

The refermentation

The refermentation takes place by natural yeasts normally contained in the wine, in the presence of sugars at temperatures above 15°C. The sugar part of the wine is transformed into alcohol with the development of carbon dioxide (natural fermentation). In this phase, which can last a few weeks, the wine becomes cloudy, more the wine is sweet and more it will develop "bubbles" and pressure. 
At the end of the refermentation, the yeasts fall to the bottom of the bottle forming a slight deposit, subsequently the wine becomes clear, only now can it be consumed.
 

Place of storage

During the aging the bottles should be stored in cool places without excessive temperature changing and with little light.
